Solubrae makes wine the way wine is supposed to be made: from California grapes, through traditional fermentation, with the same attention to variety, terroir, and technique that goes into any bottle worth opening. The difference is what happens at the end of that process. A gentle, cold-temperature method removes the alcohol while preserving everything else: the color, the aromatics, the fruit, the structure, and the finish. What remains is a genuine California wine at less than 0.5% ABV.

This is not a wine alternative. It is not a mocktail dressed in a wine bottle. It is wine, made by winemakers, from real California grapes, with the alcohol removed after fermentation is complete. The flavor comes from the grapes and the craft, not from additives or artificial flavoring.

How Alcohol Removal Works

Alcohol removal is a post-fermentation process, not a substitute for fermentation. The grapes are harvested, crushed, and fermented exactly as they would be for traditional wine. The wine develops its flavor, structure, and character through that fermentation process. After fermentation is complete, a cold-temperature vacuum distillation method removes the alcohol while preserving the volatile aromatics and flavor compounds that make wine worth drinking. The result is a wine with less than 0.5% ABV that tastes the way it does because it went through the same process as any well-made bottle.

This matters because it is the only method that preserves real wine character. Grape juice, flavored beverages, and wine-adjacent products cannot replicate what fermentation builds. Solubrae's wines taste like wine because they are wine.

Why California Provenance Matters

California wine has a reputation built over decades, and Sonoma County sits at the center of it. The coastal climate keeps temperatures cool during the growing season, which means grapes ripen at a measured pace and hold onto their natural acidity. That acidity is what gives California wine its freshness and structure. It is what makes a Pinot Grigio bright and mineral instead of flat and sweet, and it is what keeps a rosé dry instead of cloying.

Solubrae sources from California because the grapes are better. Imported wine grapes grown in warmer climates produce fruit with lower acidity and higher sugar content, which leads to sweeter, less structured finished wines after alcohol removal. California grapes, especially those grown in Sonoma County's coastal fog belt, arrive with natural balance already in place. The winemaking process preserves it, and the alcohol removal process doesn't compromise it.

The Wines

DAYLIGHT is Solubrae's alcohol-removed Pinot Grigio, sourced from Sonoma County vineyards. It opens with citrus on the nose, moves into pear and stone fruit on the palate, and finishes with the clean mineral quality that comes from cool coastal soils. At less than 0.5% ABV and 25 calories per 5oz pour, DAYLIGHT is the wine for any hour of the day when you want something worth pouring.

SUNDOWN is Solubrae's alcohol-removed rosé, a blend of Pinot Grigio and Pinot Noir from California vineyards. The Pinot Grigio brings bright acidity and floral lift. The Pinot Noir adds color, body, and the berry character that makes SUNDOWN taste like a real rosé. Wild strawberry, melon, and a dry, clean finish. At less than 0.5% ABV and 35 calories per 5oz pour, SUNDOWN is built for evenings that deserve something in the glass worth noticing.
